Shrimp and Sea Scallop Salad

Happy New Year!
So I thought I’d start off with using this section! I, much like the rest of America would like to lose some weight. I enjoy rich, comforting foods and to top things off I’m still unable to work out much due to this ankle break (insert aggressive eye roll). My roommate is doing Keto and I’m doing keto-inspired living. Meaning low carb (not just no starches- carbohydrates are in literally everything even juice.) Anyway, I love seafood it’s literally my jam. This is fresh and yummy (bacon vinaigrette)! I hope you enjoy ????

Let’s start with my newest obsession Warm Bacon Dijon Vinaigrette!! In my humble opinion, It’s rewarding AF to make your own dressings; they’re low in sugar and you can toy around with the flavors. This one is served warm… FUN!

Spicy Bacon Dijon vinaigrette (makes two servings)

  • 1Tbsp warm bacon drippings (fat) *substitute with veg or olive oil if you must
  • 1Tsp white wine vinegar
  • 1Tsp dijon mustard
  • 1/2 tsp pickled jalapeno
  • 1 sliced jarred sundried tomato (drip the oil into your ingredients)
  • 1 dash dried red pepper flakes (optional) 
  • a little minced ginger (optional- but rounds out flavors)

shake till evenly distributed, I love it!! it will solidify while you work on other things just warm for 10-20 seconds

 

The Salad is super easy because you’re using a compound butter on the seafood

In a HOT pan (starting with a hot pan helps you not overcook your meat and have a beautiful sear)

  • melt your compound butter
  • add chardonnay (just a splash)
  • add your shrimp shells (optional but do it if you can!)

add seafood (when butter is like 50% melted, be careful not to overcook and only flip once! This shouldn’t cook longer than like 4-6 minutes

 

 

Time to plate! 

  • Use a handful and a half of arugula/ baby spinach mix (or green that can be cooked (the dressing is warm!)
  • healthy pinch of rainbow micro-greens (adds a nice nutty bite)
  • drizzle warm dressing over top
  • Arrange seafood on top pouring any herby/buttery goodness on the seafood

There you have it, easy yummy kind of impressive but not “too much”! Hella bomb! only took like 15 to make! Lets eat!
